Banana Pudding

Layers of vanilla pudding, Nilla wafers, fresh bananas, and fluffy meringue. Church potluck royalty.

Ingredients

  • 3/4 cup sugar
  • 1/3 cup flour
  • pinch salt
  • 3 cups whole milk
  • 4 egg yolks
  • 2 tsp vanilla extract
  • 1 box Nilla wafers
  • 5-6 ripe bananas (sliced)
  • 4 egg whites (for meringue)
  • 1/4 tsp cream of tartar (for meringue)
  • 6 tbsp sugar (for meringue)

Instructions

  1. Preheat oven to 350°F.
  2. Whisk sugar, flour, and salt in a saucepan.
  3. Gradually whisk in milk. Cook over medium heat until thickened, stirring constantly.
  4. Temper yolks: whisk a little hot pudding into yolks, then add back to pot.
  5. Cook 2 more minutes, stirring. Remove from heat and add vanilla.
  6. Layer in a 9x13 dish: wafers, bananas, pudding. Repeat 2-3 times.
  7. End with pudding on top.
  8. For meringue: Beat whites and cream of tartar until soft peaks form.
  9. Gradually add sugar, beating until stiff and glossy.
  10. Spread meringue over pudding, sealing to edges.
  11. Bake 12-15 minutes until meringue is golden.
  12. Cool, then refrigerate.

💡 Tips & Notes

Real pudding (not instant) makes all the difference! Some folks prefer whipped cream topping instead of meringue - both are traditional.
