Cornbread

Crispy-edged, tender-centered cornbread baked in a cast iron skillet. Don't even think about adding sugar!

Ingredients

  • 2 cups cornmeal (preferably stone-ground)
  • 1/2 cup flour
  • 1 tsp salt
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 2 cups buttermilk
  • 2 eggs
  • 4 tbsp bacon drippings or butter (plus more for skillet)

Instructions

  1. Preheat oven to 425°F with a 10-inch cast iron skillet inside.
  2. Whisk cornmeal, flour, salt, baking powder, and baking soda.
  3. In another bowl, whisk buttermilk, eggs, and 4 tablespoons melted drippings.
  4. Add wet ingredients to dry and stir just until combined.
  5. Carefully remove hot skillet and add 2 tablespoons bacon drippings.
  6. Swirl to coat the bottom and sides.
  7. Pour batter into sizzling skillet - it should sizzle!
  8. Bake 20-25 minutes until golden and pulling from edges.
  9. Turn out onto a plate and slice into wedges.
  10. Serve hot with butter.

💡 Tips & Notes

A hot, greased cast iron skillet is essential for that crispy crust! Traditional Southern cornbread is NOT sweet - the sweetened version is for Yankees.
