Instructions
Preheat oven to 425°F with a 10-inch cast iron skillet inside.
Whisk cornmeal, flour, salt, baking powder, and baking soda.
In another bowl, whisk buttermilk, eggs, and 4 tablespoons melted drippings.
Add wet ingredients to dry and stir just until combined.
Carefully remove hot skillet and add 2 tablespoons bacon drippings.
Swirl to coat the bottom and sides.
Pour batter into sizzling skillet - it should sizzle!
Bake 20-25 minutes until golden and pulling from edges.
Turn out onto a plate and slice into wedges.
Serve hot with butter.
💡 Tips & Notes
A hot, greased cast iron skillet is essential for that crispy crust! Traditional Southern cornbread is NOT sweet - the sweetened version is for Yankees.
